Crock Pot Wednesday ~ Salsa Chicken


With my weird work schedule and long hours a couple of days a week, I am finding that my crock pot is my friend! I have found that, for the most part, I can put all my ingredients in the crock pot the night before, refrigerate it, and pull it out the next morning and set my crock pot to "Low" and head out the door!

This is a recipe that I found while looking around in Blog-land one day. I had the ingredients needed, so I thought I would give it a try.

It is DELICIOUS!

Salsa Chicken

Ingredients:

1 to 2 pounds of chicken. I used a standard 20 ounce package. You can use any boneless chicken you wish...tenderloins, breasts...anything.
1 can diced tomatoes
1 jar salsa of your choice
1 can corn (or fresh or frozen)
1 can black beans (or red beans, or brown beans)
1 small to medium diced onion
Shredded cheese (any flavor)
Sour cream to taste
Chips (Optional)



First, dust off your crock pot and set it on the counter somewhere that it won't get knocked off. Maybe not important to some, but for those of you with a 6 y.o. son....very important!



Next, dice up your onion. These will eventually be cooked to oblivion, so exact size and shape doesn't matter!



Throw the onions into the crock pot.



Take the "leftover" parts of the onion and dump them into your compost bucket.



Hmmmm, doesn't all that look appetizing?



Add Chicken on top of your onions.



Then, drain and rinse your beans.



Add corn and rinse again.


Dump the beans and corn on top of the chicken.





Shoot, I forgot to season the chicken! Scrape the beans and corn away from the chicken, and season to your taste. I just used salt and pepper.




Now scrape the beans and corn back over the top of the chicken and add the can of tomatoes, juice and all.




Now pour in the jar of salsa.




Fill the now-empty salsa jar about 1/4 to 1/2 with water and pour into crock pot.





Swirl around the bean/corn/tomato/salsa/water mixture until combined.




Cover.





Now cook on "High" for about 4 hours or "Low" for about 6 to 7 hours. To be honest, I really didn't time this, but that's the beauty of crock-pot cooking. As long as their is enough liquid, it's not going to hurt to cook it a little longer.





And VIOLA! Salsa Chicken!

At first, I tried serving it on top of corn chips, with shredded cheese and sour cream, but I found that it just makes the chips completely soggy. So, with my second helping, I found I liked it much better in a bowl with the cheese and sour cream, and using the chips to dip into the mixture.

It was SO much better than I even thought! I ate on this for THREE days without getting tired of it!

As a side note, I've never been much of a sour cream eater, but I am telling you, mixing about a teaspoon of sour cream into your bowl of this just MAKES the dish! There is a COMPLETE change of flavor just by adding that little bit of sour cream!

So, the next time you are in the mood for an effortless, delicious chicken dish, TRY THIS!

  5. I have made a recipe similiar to this but I added a block of cream cheese to it when I got home that evening and let it sit (melt) for about 20min then mixed it up. You may want to try this next time. It makes it a little creamier. My husband loved it. Thanks for reminding me about this recipe, I'll have to make it again soon. My crock pot is my bestest friend in the kitchen.
